Tucson sprawls across ancient desert floor, where the Santa Cruz River once ran year-round before settlers and cities changed its course. Paul taps these underground waters, drawing from the same source that sustained Tohono O'odham peoples for centuries, water filtered through desert stone and time.

This is terroir in its truest sense, not borrowed from distant shores but born from the Sonoran Desert's own character. The American Distilling Institute has recognized what Paul understood from the beginning: authenticity comes not from imitation but from listening to the land.
