Treaty Oak Distilling

In the hill country west of Austin, where limestone ridges rise from ancient seabeds and spring water filters through porous rock, Daniel Barnes planted a flag in 2006 that would help resurrect Texas whisky. Treaty Oak Distilling became the fourth distillery to stake its claim in the Lone Star State since Prohibition's end—a pioneer in what would become a stampede.

The name itself speaks to Texas mythology, honoring the legendary oak where Stephen F. Austin supposedly signed agreements with local tribes. But Barnes chose substance over symbol, building his operation around the Hill Country's gifts: pristine aquifer water and the fierce Texas sun that would accelerate aging in ways Kentucky never imagined.

For a decade, Treaty Oak operated from modest quarters, learning the alchemy of grain and heat. Then in 2016, Barnes made his boldest move—relocating to a 28-acre ranch in Dripping Springs called Ghost Hill. Here, among the rolling pastures and native oak mottes, he built Texas's largest certified organic distillery, a grain-to-glass operation that would control every step from seed to sip.

The ranch became more than a distillery; it evolved into a destination. Alice's restaurant serves Hill Country cuisine while The Rickhouse pours cocktails crafted from spirits distilled yards away. An on-site brewery adds another layer to the operation, creating a complete beverage ecosystem rooted in Texas terroir.

Treaty Oak's copper stills work overtime in the Texas heat, producing Ghost Hill Texas Bourbon from organic grains while also crafting Waterloo Gin and blending sourced bourbon under the Red Handed label. The approach reflects modern American whisky pragmatism—respecting tradition while embracing innovation, making their own while curating the best from elsewhere.

In November 2024, High Basin Brands acquired the operation, ensuring Treaty Oak's next chapter. But the essence remains unchanged: a Texas distillery that understands place matters, that the limestone beneath their feet and the relentless sun overhead create whisky that could only exist here, in this particular patch of Hill Country where spring water meets grain and time moves at the speed of Texas ambition.
