Denmark's largest craft distillery, located in the historic former train workshop buildings at the port of Nyborg on Funen island. Founded by Nicolai and Niels Romer, who began experiments in 2009 at their Orbaek brewery, opening the full distillery in 2017. Two 6,000L Holstein column stills, plus two 4,000L Holstein pot stills (original 1,000L still now used for gin/schnapps). Fills 200+ whisky casks per year. Produces exclusively organic spirits: Isle of Fionia Whisky, gin, rum, vodka, aquavit. Founding member of the Danish Whisky Manifesto (2025).
